Perfectly tender, fragrant, and umami 'egg custard' quiche made using tofu and cashews, seasoned with nutritional yeast and miso. 🥧🍳 Interspersed with sautéed spinach, green bell pepper, juicy diced button mushrooms, and cherry tomatoes. 🥬🫑🍄🍅 All atop a crispy homemade tart crust infused with Italian herbs instead of sugar; love how chef Jia Xuan played with her signature sweet crust to make a savoury version instead! 👩🏻‍🍳 Definitely my favourite bake from the pop-up! 💯 I haven't had quiche for almost a good 10 years (I was nervous at a university scholarship introduction talk and found comfort in the quiche served at the buffet lmao) so this vegan rendition was nostalgic and hit the spot for me.
