Soft and moist lemon sponge cake layered with juicy mango slices, mango curd with some

chewy bits, and creamy mango mousse. Second time eating this and it somehow seemed to have improved! Not sure if they modified the recipe given that the first time I ate it was when it had just been launched, or if I had spent too long taking pictures the first time round such that it kind of 'melted' hehe. This time it held together perfectly and it was an absolute delight to eat, naturally sweet and slightly zesty. My non-veg mum loved this too. Lemon sponge with mango slices, mango puree, and mango konnyaku jelly. Zesty fruity scent paired

with indulgent fluffy layers of cream that was somehow reminiscent of cream cheese, made using cashew nuts and assorted mylks (soy mylk, oat mylk, coconut mylk). Super nostalgic flavour, as mango cakes from neighbourhood confectionery shops used to be my family's go-to for birthday celebrations when I was growing up. I definitely missed the ease of grabbing such cakes after I went plant-based, so I'm happy it's now conveniently available at Greendot Patisserie! Nice presentation with the yellow ribbon, though be warned that this cake might fall apart after the plastic wrap is removed due to the heaps of cream.
