Del Destino

I saw this for the first time at Costco‘s, and it immediately brought me back to my days in Sicily over 20 years ago. My favorite food there were Panini’s at a little shop where I would select all the grilled veggies they had, along with fresh mozzarella and mayo. I couldn’t think of a good bread similar to what I had there, so I found a great recipe for focaccia, I made my sandwich with the grilled red pepper and eggplant, in addition to sun-dried tomatoes and olives, Miyoko’s Fresh Mozzarella., and Best Foods Vegan Mayo, and a homemade spread of basil pesto, This jar also comes with asparagus and zucchini, which I’ll use for a spaghetti dish.

Since it has been so long since I’ve been to Sicily, I can’t remember exactly what their Panini taste like, so I can’t claim that my own tastes just like it, but it was pretty darn good, one that I’ll continue making as long as I keep finding this brand. My panini is really big, as you can see in my photo, just like how I remember in Sicily. My co-workers were all meat- eaters, and would get prosciutto panini, way smaller than my veggie. I loved my panini’s so much that I never felt like I was missing out. Same with my homemade one here. No need for any meat alternatives, because it’s so yummy and fulfilling as is.

I couldn’t help but take a photo of all the jars on the shelves. Even though they’re all the same veggies, they all look different and so pretty and colorful. They’re like jars of art.
