Real Thai

When I want a simple, fresh, delicious, and quick meal, I grab 1 cucumber, 1 carrot, 1 bell pepper, mint, coriander, and rice paper. Voila - fresh spring rolls! Easy to prepare (just immerse an individual sheet in water and remove after only a few seconds, leave it on a towel for 1 minute to soften). Made from rice, water, tapioca flour, and salt. 6 pieces (just the wrapper) is about 180 calories, so be careful if you’re watching your calorie intake.
