I bought this nondairy cashew ricotta cheese from Treeline cheese makers to use in a
vegan spanakopita. In the past I’ve always made my own ricotta out of tofu or cashews, but was excited to try a product that was pre-made in order to save some time. The ricotta worked really well in the spanakopita. It added a nice tang and creaminess. I will definitely plan on using it in the future for any dishes that call for ricotta.
