These vegetable protein balls, cook super fast in the oven, and I have been using
them on salad bowls at lunch time. I start work at 4am, so when I come back from work, I need to eat, but don’t feel up to cooking huge meals. The sweetcorn in the balls is a tasty added extra. They can be a little dry, but I add dressing to the salad, or I drizzle olive oil on top.
