Vegan version of a Vietnamese rice noodle salad topped with fried tofu, greens, puffed brown
rice, crushed nuts and a soy chili based dressing. The dish was a good mix of ingredients and textures with lots of freshness from the greens. While it made a decent breakfast option, I was hoping for more profound Vietnamese flavors.
