This is part of this Christmas cookie box where $2 is donated to a women’s
charity. These meringues (which I assume are made from aquafaba) were absolutely fantastic! My aunt, who is allergic to eggs, loved them too and hasn’t had meringues in a very long time. They have a strong peppermint taste and the texture is absolutely perfect — fluffy and chewy!
